The best olive oil in Europe
FAO experts have scientifically established that it is precisely beneath Tar, on the Larun plantation, that the olives producing the best olive oil in Europe are grown.
How? Why? Is it not almost sacrilegious to say this in comparison with the olives of the southern Mediterranean, from Spain, Sicily and Greece?
The olive tree, this biblical plant, ripens and is harvested in November. The secret lies in the gentle cold. The olives do not fully ripen, resulting in oil with a richer composition of acids. However, this was already known to ancient peoples. The famous Roman epigram writer Marcus Valerius Martialis (40–103 AD), while praising his native Córdoba, wrote:
UNCTO CORDUBA LAETIOR VENAFRO HISTRA NEC MINUS ABSOLUTE TESTA.
(Cordoba, more fertile than oil-rich Venafrum and as perfect as the oil of Istria.)
